- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium mixing bowl, mash the ripe bananas until mostly smooth and creamy.
- Add the creamy peanut butter to the mashed bananas and stir until fully combined.
- Add the rolled oats and maple syrup (or honey). Mix until a thick, even batter forms and no dry oats remain.
- Transfer the batter to the prepared pan and spread it out evenly with a spatula, pressing gently into the corners.
- Bake for 20–25 minutes, or until the edges are lightly golden and the center is just set.
- Allow the bars to cool completely in the pan, then lift out using the parchment and slice into 9 bars.
Notes
For extra flavor, sprinkle a pinch of flaky sea salt on top before baking or fold in a handful of dark chocolate chips. These bars firm up as they cool and are perfect for meal prep.
