Moroccan Mint Tea

This classic Moroccan mint tea is a refreshing, fragrant ritual made with green tea, fresh spearmint, and sugar—poured from a height to create signature foam.

Ingredients
  

Tea Base
  • 1 tbsp gunpowder green tea Chinese gunpowder green tea preferred
  • 4 cups water filtered, brought to a boil
Mint & Sweetener
  • 1 cup fresh spearmint leaves plus tender stems, loosely packed
  • 4 tbsp granulated sugar use 4–6 tbsp to taste

Equipment

  • Tea kettle
  • Teapot (Moroccan teapot preferred)
  • Tea glasses

Method
 

  1. Bring the water to a boil in a kettle.
  2. Add the green tea to a teapot. Pour in about 1/2 cup boiling water, swirl gently for a quick rinse, then discard the rinse water.
  3. Add the remaining boiling water to the teapot and steep for 2 minutes.
  4. Add the fresh spearmint and sugar. Steep for 3 more minutes.
  5. Mix the tea: pour a little into a glass and return it to the pot (or stir gently) to evenly dissolve the sugar.
  6. Pour from a height (about 12–18 inches) into tea glasses to aerate and create a light foam. Serve warm.

Notes

For the most authentic flavor, use fresh spearmint and Chinese gunpowder green tea. Adjust sugar to taste, and pour from a height to create the signature foam.
