Ingredients
  

Yogurt Base
  • 1 cup plain Greek yogurt (2% or 5%)
  • 1/3 cup pumpkin purée not pumpkin pie filling
  • 1 tbsp maple syrup or more to taste
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • ground cinnamon pinch, optional
Toppings
  • 1/4 cup granola of choice
  • 1 tbsp pumpkin seeds
  • 1 tbsp chopped pecans or walnuts
  • 1 tbsp dried cranberries or raisins optional

Method
 

  1. In a mixing bowl, whisk together the Greek yogurt, pumpkin purée, maple syrup, pumpkin pie spice, and vanilla extract until smooth and creamy.
  2. Taste the mixture and add a little more maple syrup if you prefer a sweeter bowl.
  3. Transfer the pumpkin yogurt mixture to a serving bowl and smooth the top with the back of a spoon.
  4. Top with granola, pumpkin seeds, chopped pecans or walnuts, and dried cranberries or raisins.
  5. Finish with a pinch of ground cinnamon or extra pumpkin pie spice and enjoy immediately.

Notes

For extra fall flavor, try gently warming the pumpkin purée before mixing it into the yogurt. You can also prepare the yogurt base up to 3 days in advance and keep toppings separate until serving so they stay crunchy.
