  • 4 ripe bananas sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla extract
Cobbler Batter
  • 1/2 cup unsalted butter 1 stick; melted in the baking dish
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup whole milk

Method
 

  1. Preheat the oven to 350°F (175°C). Add the butter to a 9x9-inch baking dish and place it in the oven until melted.
  2. In a bowl, toss the sliced bananas with granulated sugar, brown sugar, cinnamon, nutmeg, and vanilla extract. Set aside.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Pour in the milk and whisk until the batter is smooth.
  4. Carefully remove the hot baking dish from the oven. Pour the batter evenly over the melted butter—do not stir.
  5. Spoon the banana mixture evenly over the batter. Do not stir; the batter will rise around the fruit as it bakes.
  6. Bake for 40 minutes, or until the top is golden brown and the cobbler is bubbling around the edges.
  7. Cool for 10 minutes before serving warm, ideally with vanilla ice cream or whipped cream.

Notes

Use very ripe bananas for the best flavor. Avoid stirring the layers—this is what creates the classic cobbler texture. Optional: add 1 tablespoon bourbon to the banana mixture for a deeper caramel note.
