- Preheat a skillet over medium heat and melt the butter.
- Add the apple slices and sauté for 2–3 minutes per side until lightly caramelized and tender. Remove from heat.
- Lightly toast the croissants cut-side down in the same skillet (or in a toaster oven) until golden.
- Spread the softened goat cheese evenly over the bottom halves of the croissants.
- Layer the warm apple slices on top of the goat cheese.
- Drizzle with honey and sprinkle with black pepper.
- Add fresh thyme or arugula if using, then close the sandwiches with the croissant tops.
- Serve immediately while warm and flaky.
Notes
For extra café-style flair, add a pinch of flaky sea salt, a few crushed walnuts or pecans, or a swipe of Dijon mustard for more savory edge. Pear slices also work beautifully in place of apples.
