Ingredients
  

Croissant Sandwich
  • 2 large croissants sliced horizontally
  • 1 apple Honeycrisp or Granny Smith, thinly sliced
  • 4 oz goat cheese softened
  • 1 tbsp honey plus more to taste
  • 1 tbsp unsalted butter for sautéing apples
  • 1/4 tsp ground black pepper
  • fresh thyme optional, for garnish
  • arugula optional, for peppery crunch

Method
 

  1. Preheat a skillet over medium heat and melt the butter.
  2. Add the apple slices and sauté for 2–3 minutes per side until lightly caramelized and tender. Remove from heat.
  3. Lightly toast the croissants cut-side down in the same skillet (or in a toaster oven) until golden.
  4. Spread the softened goat cheese evenly over the bottom halves of the croissants.
  5. Layer the warm apple slices on top of the goat cheese.
  6. Drizzle with honey and sprinkle with black pepper.
  7. Add fresh thyme or arugula if using, then close the sandwiches with the croissant tops.
  8. Serve immediately while warm and flaky.

Notes

For extra café-style flair, add a pinch of flaky sea salt, a few crushed walnuts or pecans, or a swipe of Dijon mustard for more savory edge. Pear slices also work beautifully in place of apples.
