Mashed Potato Pancakes with Meat Filling

Ingredients:


For the Pancakes:

  • 3 cups cold mashed potatoes
  • 1 egg
  • 1/4 cup all-purpose flour (plus more if needed)
  • Salt and pepper to taste

  • 1 tablespoon olive oil
  • 1/2 lb ground beef or ground chicken
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced

1. In a skillet, heat olive oil over medium heat. Add onion and cook until soft, about 3 minutes. Add garlic and ground meat, season with salt, pepper, and optional spices. Cook until browned and no longer pink. Set aside to cool slightly.

2. In a large bowl, mix mashed potatoes, egg, flour, salt, and pepper until a dough forms. Add a bit more flour if it’s too sticky.

3. Scoop about 2 tablespoons of potato mixture, flatten into a patty in your hand, and spoon some meat filling into the center. Top with another small scoop of potato mixture and seal edges to form a pancake.

4. Repeat until all the mixture and filling are used.

5. Heat oil in a nonstick skillet over medium heat. Fry the pancakes for 3–4 minutes per side until golden and crispy.

6. Drain on paper towels and serve warm with sour cream, ketchup, or your favorite dipping sauce.
